There are a few things I miss going from vegetarian to vegan. Omelets are one and of course cheese. I'm always looking for heathier and humane alternatives to these foods and others I may discover along the way. Today I found out you can use chickpea flour to make omelets and I ran across a great vegan cheese recipe too. I know what I'm having for breakfast in the morning - a vegan omelet with cashew cheese, mushrooms, onions, and coconut bacon sprinkled on top. Doesn't that sound delicious?!
